I have been making this Creamy Lemon Pasta sauce for awhile now and it is always a hit. This recipe is simple, delicious, and versatile! If you are a lemon lover like me, this recipe is for YOU!
Other than zucchini, i also love to make this sauce with penne pasta and I will usually add shrimp or chicken for extra protien. Today, I show you a healthier option for when i crave this deliciousness but don't want all the carbs :)
LEMON CREAM SAUCE
2 tbs butter
1 tbs all-purpose flour
1 cup heavy cream
3 tbs fresh lemon juice
1 tbs chicken base (i used lobster base cause i luv seafood)
1/4 tsp kosher salt
1/8 tsp ground black pepper
optional 2 tbs capers
PASTA
4 large spiralized zucchini
or
2 1/2 cups penne pasta, uncooked
I) In a pot, make a roux by melting the butter and stirring in the flour.
2) To the pot, add the heavy cream, lemon juice, chicken or lob base, salt and pepper. Stir. Heat and simmer until thickened. Stir often to prevent burning.
3) Combine raw zucchini noodles or cooked penne with Lemon Cream Sauce and capers.
ps. when using the zucchini noddles, i like to let them simmer in the sauce for a bit to soften the zucchini!
